Select specific micro-environments within Orchadale Estate were selected, focusing on biodiversity-rich zones ideal for coffee cultivation. Here, SLN9 and SLN795 varietals are hand-picked at optimal ripeness. Following rigorous sorting, the chosen coffee cherries undergo a controlled fermentation process. The innovative method alternates between aerobic and anaerobic conditions to harness indigenous yeasts naturally present in the environment. This technique enhances the coffee's flavour complexity, ensuring each batch embodies the distinct terroir of the Shevaroy Hills.
